間もなくやってくるクリスマス。胸を高鳴らせる人も多い一方で、クリスマスケーキを作る洋菓子店からは「クリスマスケーキをやめたい」という声も…洋菓子店を直撃しているのは、材料費の高騰だ。卵・イチゴ・チョコレートなどが軒並み値上がりしているという。クリスマスに向けて奮闘する洋菓子店の現状を取材した。

新潟市西区の洋菓子店・ガトーシェフ三昧堂。
クリスマスを約2週間後に控える中、すでに約1000個の注文が入っているという。
高井司社長は「クリスマスに関しては、利益はすごく少なくなってきている。もう他の店からは、クリスマスケーキをやめたいと言う声もある」と現状を明かす。
材料費の高騰が止まらず、この時期の利益率は下がる一方だという。
「全部。上がっていないものがないくらい。全般的に上がっているので、どれがどのくらいか把握できないくらい」
そんな中、クリスマスの時期、価格が高騰するのがイチゴだ。今は1パック800円～1000円で2023年の同じ時期に比べ、2割ほど上がっているという。
「クリスマスに関しては、（1パック）2000円超えると言われているので、ちょっと困っている」
さらに、一番値上がりしているのは、チョコレートだ。
現在、仕入れているフランスのチョコレートは1kgあたり8000円。これまでの価格と比べると、2000円～3000円高くなっているという。
こうした材料費の高騰で2024年のクリスマスケーキは4200円から4500円に値上げを余儀なくされた。
普段は買い控えも…クリスマスは特別「何とか頑張りたい」
また、物価高騰に圧迫されているのは店側だけではない。
高井社長は「普段から少し買い控えがあると感じる。色々なものが物価高で上がってきている中で、ケーキは嗜好品。そこは一番節約されやすい」と話す。
それでもクリスマスケーキの予約数は例年通りで、やはり少し贅沢をしてもクリスマスを楽しみたい人は多いようだ。
「できるだけロスをなくして、これ以上高いものにはしたくないと思っているので、何とかここら辺で頑張れればと思っている」と高井社長は意気込む。
厳しい物価高と向き合いながらもお客を満足させるための努力は続く。
